1/2 cup Ruk's Preserves Orange Marmalade 1 (11 oz) can Mandarin Oranges
1 cup Walnuts, candied 4 Tbsp steak seasoning
1 cup Purple Onions, julienned 12 cups Fresh Spinach
1 lb. Boneless, Skinless Chicken Breast Halves Goat Cheese (optional)
Preheat grill for medium-high heat.
Season chicken with steak seasoning.
In a small sauce pan heat orange marmalade to thin slightly. Set aside about 1/2 cup for basting and 1/2 cup for dressing.
Lightly oil the grill grate. Grill chicken for 6 to 8 minutes on each side, basting frequently with the reserved portion of the dressing, or until juices run clear. Cool, and cut into strips. Discard basting sauce.
Heap approximately 2 cups of spinach per plate. Arrange walnuts, mandarin oranges, purple onions, and goat cheese over spinach. Top the salad with grilled chicken strips, and drizzle with remaining dressing to serve.
